Pecan Cookies

INGREDIENTS

  • 1 cups gluten free oats
  • 1 cup pecan nuts
  • 1 cup ground almonds
  • 2 tablespoons maple syrup
  • 3 tablespoons butter (substitute with macadamia nut oil for a dairy free option)
  • 2 tablespoons macadamia nut oil (coconut oil also works)
  • 1 tablespoon water
  • ½ teaspoon bicarbonate of soda 
  • ¼ teaspoon sea salt

INSTRUCTION

  1. Preheat the oven to 160°C, 320°F, gas mark 3.
  2. Line and grease a baking tray with parchment paper.
  3. Chop up the pecans into small pieces but leave 10 halves aside to decorate the biscuits.
  4. Mix the pecans together with the oats, ground almonds and salt. 
  5. Gently melt the butter in a pan and then combine with the maple syrup and macadamia nut oil. Add to the dry ingredients and mix together.
  6. Heat the water in the same pan and add the bicarbonate of soda. When it has dissolved, mix into the cookie mixture. 
  7. With wet hands, scope out enough mixture to form one cookie shape and flatten onto the parchment paper. 
  8. Add a pecan half to the cookie. Press it down and mold the sides around it. Repeat until all the mixture has been used. 
  9. Bake in the oven for 20-25minutes, or until cookies are a lovely golden brown colour.
  10. Allow to cool before eating. Enjoy!
