Date & Brazil Nut Cookies

  • 1 cups gluten free oats
  • 1 cup Brazil nuts, chopped 
  • 1 cup ground almonds
  • 2 tablespoons maple syrup
  • 1/2 cup chopped dates
  • 3 tablespoons butter (substitute with coconut oil for a dairy free option)
  • 2 tablespoons macadamia nut or coconut oil
  • 1 tablespoon water
  • ¼ teaspoon sea salt


  1. Preheat the oven to 160°C, 320°F, gas mark 3.
  2. Line and grease a baking tray with parchment paper.
  3. Mix together the oats, Brazil nuts, ground almonds and salt. 
  4. Gently melt the butter and then combine with the maple syrup, water and macadamia nut oil. Add to the dry ingredients and mix together.
  5. Roll the mixture into approximately 12 balls (although, this depends on how big you want your cookies) with wet hands. 
  6. Press the balls down with a fork to create a disc shape. 
  7. Bake in the oven for 20-25minutes, or until cookies are a lovely golden brown colour. 
  8. Allow to cool before eating. Enjoy!
