Macadamia Nut Cookies

  • 1 cups gluten free oats
  • 1 cup macadamia nuts, chopped
  • 1 cup ground almonds
  • 2 tablespoons honey
  • 3 tablespoons butter (substitute with macadamia nut oil for a dairy free option)
  • 2 tablespoons macadamia nut oil
  • 1 tablespoon water
  • ½ teaspoon bicarbonate of soda 
  • ¼ teaspoon sea salt


  1. Preheat the oven to 160°C, 320°F, gas mark 3.
  2. Line and grease a baking tray with parchment paper.
  3. Mix together the oats, macadamia nuts, ground almonds and salt. 
  4. Gently melt the butter and then combine with the honey and macadamia nut oil. Add to the dry ingredients and mix together.
  5. Heat up the water and add the bicarbonate of soda. When it has dissolved, mix into the cookie mixture. 
  6. Roll the mixture into approximately 11 balls (although, this depends on how big you want your cookies) with wet hands. 
  7. Press the balls down with a fork to create a disc shape. 
  8. Bake in the oven for 20-25minutes, or until cookies are a lovely golden brown colour. 
  9. Allow to cool before eating. Enjoy!
