Easy Chicken Liver Pâté

INGREDIENTS

  • 400g organic chicken livers 
  • 100g organic butter or ghee
  • 1 finely diced onion (approx. ½ cup)
  • 2 garlic cloves, finely minced
  • 1 tablespoon of fresh thyme leaves 
  • ½ teaspoon of sea salt
  • ¼ teaspoon of white pepper
  • ¼ teaspoon of nutmeg, ground
  • 1 tablespoon of apple cider vinegar 
  • ½ apple, peeled and diced

INSTRUCTIONS

  1. Melt 50g of the butter in a pan over a low heat.
  2. Add the onion and sauté until softened, but not coloured.
  3. Add the cider vinegar and cook for 2 minutes.
  4. Add the remaining ingredients and fry until the livers are cooked through – about 5 minutes.
  5. Place the mixture into a food processor and blend until smooth.
  6. Transfer the pâté into ramekins or small dishes. 
  7. Melt the remaining 50g of butter in a clean pan. Pour the butter over the pâté.
  8. Transfer to the fridge to chill. Serve from the ramekin when ready.
