Paleo Hot Cross Muffins

DRY INGREDTIENTS

  • 150g ground almonds
  • 1 teaspoon mixed spice 
  • 150g tapioca flour
  • 1 teaspoon ground cinnamon
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt 
  • ¼ teaspoon nutmeg
  • ½ cup diced eating apple
  • 1 teaspoon bicarbonate of soda
  • ½ cup sultanas 


WET INGREDIENTS

  • 2 large eggs
  • Zest of 1 lemon 
  • Zest of 1 orange                      
  • 1 ½ tablespoons maple syrup
  • ¼ cup macadamia nut oil or melted coconut oil

 

CROSS INGREDIENTS (optional):

  • 50g dark chocolate


INSTRUCTIONS

  1. Preheat oven to 180°C and a grease muffin tray or muffin cases.
  2. Add all the dry ingredients, except the fruit, into a food processor and blend for 20 seconds or until combined.
  3. Whisk the eggs, syrup, zest and oil together in a bowl. Then add to the dry ingredients and blend until combined. You can add a couple of tablespoons of water if you think your mixture is too thick.
  4. Add the fruit and pulse a couple of times until incorporated.
  5. Spoon into the muffin cases or use wet hands to roll into balls and add to the muffin cases. The batter will be very sticky.
  6. Bake in the oven for 20-25 minutes or until golden brown.
  7. Whilst the muffins are cooling slightly, melt the chocolate in a bain-marie. Then with a teaspoon, carefully create a cross shape when drizzling over muffins. Orpipe the chocolate in crosses over the muffins.
  8. Serve warm, cut into two and drizzle coconut oil on each half.
