Blueberry & Lemon Chia Seed Muffins

(Paleo, Grain-free, Gluten-free, dairy-free)
Lemon Blueberry Muffins
Servings: 9 small muffins or 6 standard

  • ½ cup coconut flour
  • ¼ cup tapioca flour
  • 2 tablespoons chia seeds
  • ¼ teaspoon bicarbonate of soda
  • 1 teaspoon baking powder
  • Zest from 2 lemons
  • Pinch of salt
  • 2 tablespoons lemon juice
  • ½ cup nut milk or coconut milk
  • ½ cup honey or maple syrup or ½ teaspoon liquid stevia
  • 4 medium eggs
  • ¼ cup coconut oil melted
  • 1 cup of organic blueberries (frozen or fresh)


  1. Preheat oven to 180°C (350°F) and grease 6 standard-sized muffin cups with some of the coconut oil. 
  2. In a medium bowl, mix together the coconut flour, chia seeds, salt, baking soda and lemon zest.
  3. In another medium bowl, mix together the eggs, milk, honey (or sweetener of your choice), lemon juice and melted coconut oil.
  4. Then pour the wet ingredients into the dry and mix well until the mixture has thickened and until no coconut flour lumps remain.
  5. Quickly fold in the blueberries.
  6. Divide the batter between the prepared muffin cups and bake for 20-25 minutes or when pierced with a toothpick, it comes out clean.
  7. Allow to cool for 10 minutes before carefully turning out onto a wire rack. Enjoy!
